
If corn on the cob seems a bit early this season, that’s because it is…a bit. The popular Corn Crib just outside of Strathroy heading towards Mount Brydges, selling what they call maple sweet corn, opened last weekend about two weeks before they were able to last year. Initially, the cobs were on the small side, as we hear from Ethan Vegso, who’s parents run the crib.
The Corn Crib, on Adelaide Road opened last weekend, about two weeks earlier than they did last year, and Vegso says they have a great foundation to get corn for their customers.
It’s a pretty big operation to get all that corn to the crib every day. Owner Kristi Vegso says they have 45 employees, most of them students and 4 migrant workers this year. The Corn Crib started in the 60s by the Kholsmiths and then went through a couple of ownership changes before landing on Kristi’s inlaws Kim and Dave Vegso 17 years ago and now being run by Kristi and her husband Matt for the last 3 years when they eventually took it over.
